    Steps

    1. All you need is one zucchini (courgette), one clove garlic, one red chilli, a few basil leaves, spaghetti (or linguine) and Parmesan.

    2. Top and tail your zucchini and then slice it into thin matchsticks, around the same size as your spaghetti.

    3. Bring a large pan of water to the boil, once it's boiling add a couple of pinches of salt, let the water return back to the boil then add your pasta to cook.

    4. Slice your garlic, chilli and basil into thin strips.

    5. In a pan over a medium heat add a good gulf of olive oil then add your chilli and garlic. Remember to keep an eye on this as you just want to soften them, not burn them.

    6. Once the chilli and garlic have softened and flavoured the oil add your zucchini and stir around until everything becomes coated with the flavoured olive oil.

    7. By now your pasta should be cooked so remove it from the water and add it to your zucchini, chili and garlic.

    8. Add a couple of spoons of the water your pasta just cooked in to help coat the pasta and emulsify the sauce.

    9. Stir together well so the pasta is coated all over with flavour of the oil, chilli and garlic.

    10. Serve in a bowl, scatter with chopped basil and freshly grated Parmesan.
