Steps

  1. For this dish you need, 1 chopped onion, 1 beaten egg, 100g flour, 1 tin Italian tomatoes, 2 potatoes, baked in oven with their skins on until cooked through and Parmesan.

  2. While the potatoes are still hot, carefully peel them.

  3. Once peeled chop into quarters.

  4. Working quickly while they are still hot, put your potatoes through a good mill, potato ricer or just mash them.

  5. Then add 2 pinches of salt, your flour and your egg. And then mix to a dough.

  6. Once you have a smooth dough, turn it out onto a floured work surface and knead for a minute . . Do not over work the dough.

  7. Divide the dough into four.

  8. Then roll each piece into a long sausage shape about the thickness of your thumb.

  9. Chop each sausage into 1 inch gnocchi.

  10. Push a fork gently on to each one to create the ridges.

  12. In a pan fry off your onion in a little oil till softened but not coloured.

  13. Keep stirring then once soft add your tinned tomatoes.

  14. If your using whole tomatoes break them up with a wooden spoon as they cook.

  15. Keep simmering till the tomatoes break down and form a chunky sauce.

  16. Bring a pan of water to a rolling boil then add a couple of pinches of salt. Once your water has returned back to the boil add your gnocchi. They should take around two minutes to cook through.

  17. When they are cooked your gnocchi will float to the surface.

  18. Carefully add your gnocchi to the tomato sauce.

  19. Add the mozzarella and stir in well.

  20. Stir till the mozzarella melts into the sauce then serve with grated Parmesan and black pepper.
